GOODSTUFF PIZZA'S!
HOT CHICKEN PIZZA


This is an excellent recipe as it can be made in advance and the basic topping sauce can be used for any meat, including beef, chicken, pork or fish!

Ingredients
1 Good quality pizza base
2 Breasts of chicken, thinly sliced (cooked or uncooked)
4 Sticks of Lemongrass
1 Head of Garlic
4 Fresh red chillies
6 Limes
1 Stick of fresh ginger
1 tbl spn Sunflower Oil
1 tspn Cracked black pepper
1 tin Coconut Milk
1 Packet Mozzarella Cheese
25g Cheddar Cheese, grated

Peel off the tough outer leaves of the lemongrass and cut off the bottoms.
Peel the garlic cloves.
De-seed and head the chillies.
Peel off the outerskin of the ginger.
Squeeze the limes.

Put all the ingredients, except the lime juice, chicken and coconut milk, into a small pan and cook slowly in the oil until the chillies are soft.
Transfer to a liquidiser or pestle & mortar, add the lime juice, liquidise or finely mash to a thick paste.
Mix the chicken with the paste and leave for a minimum of 4 hours in the fridge.

Stir in the coconut milk and spread the mixture on the pizza base and top with a mixture of mozzarella and grated cheddar cheese.
Put into a hot oven for 15 to 20 minutes.

The paste can be thinned with a little sunflower oil and used as a BBQ marinade for fish, shellfish, chicken and pork.
